Here’s a fun, easy, healthy recipe for toddlers and moms on the go!

Toddlers love to be able to eat food with their hands, so this is a good one for them.

It’s also great for mom or dad to grab on the way out the door.

Eggs On The Go!

A healthy meal prep recipe. You can easily adjust amounts to make more.

Ingredients:

  • 4 large eggs
  • 2-3 TBS Cottage Cheese

Directions:

  • Preheat oven to 350 degrees.
  • Whisk together well, adding salt and pepper to taste.
  • Pour mixture into muffin tin cups sprayed with cooking spray. (Should get 6)
  • Add meat of your choice, such as finely diced ham, crumbled bacon, sausage. Push the meat down into the egg mixture.
  • Add small torn pieces of fresh spinach.
  • Add shredded cheese of your choice.
  • Bake at 350 degrees for 15 minutes or until set and slightly brown around the edges.
  • Store in covered container in refrigerator for 3-5 days.
