Toddlers love to be able to eat food with their hands, so this is a good one for them.
It’s also great for mom or dad to grab on the way out the door.
Eggs On The Go!
A healthy meal prep recipe. You can easily adjust amounts to make more.
Ingredients:
- 4 large eggs
- 2-3 TBS Cottage Cheese
Directions:
- Preheat oven to 350 degrees.
- Whisk together well, adding salt and pepper to taste.
- Pour mixture into muffin tin cups sprayed with cooking spray. (Should get 6)
- Add meat of your choice, such as finely diced ham, crumbled bacon, sausage. Push the meat down into the egg mixture.
- Add small torn pieces of fresh spinach.
- Add shredded cheese of your choice.
- Bake at 350 degrees for 15 minutes or until set and slightly brown around the edges.
- Store in covered container in refrigerator for 3-5 days.
