Here’s a delicious and healthy breakfast, and a great way to get extra protein and greens into your toddler! 😊

This is my recipe, you can adjust amounts as needed:

Baby Spinach n’ Eggs

Ingredients:

  • 2 large eggs
  • 2 tablespoons 2% cottage cheese

Directions:

  • Mix together in non-stick skillet.
  • Season with salt and pepper.
  • Once this is mixed together well and starts to cook, sprinkle small pieces of fresh baby spinach over the top.
  • As it continues to cook, mix spinach into egg, mix and cook until done.
