Here’s a delicious and healthy breakfast, and a great way to get extra protein and greens into your toddler! š
This is my recipe, you can adjust amounts as needed:
Baby Spinach nā Eggs
Ingredients:
- 2 large eggs
- 2 tablespoons 2% cottage cheese
Directions:
- Mix together in non-stick skillet.
- Season with salt and pepper.
- Once this is mixed together well and starts to cook, sprinkle small pieces of fresh baby spinach over the top.
- As it continues to cook, mix spinach into egg, mix and cook until done.
